Ingredients
12 ounces yellow spaghetti
2 cups cherry tomatoes
3 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1/4 cup fresh basil, chopped
1/3 cup grated parmesan cheese
Instructions
Preheat oven to 200°C (400°F).
Place cherry tomatoes on a baking sheet.
Drizzle with olive oil and season with salt, black pepper, and oregano.
Roast for 15–20 minutes until softened and slightly caramelized.
Cook spaghetti according to package instructions until al dente.
Reserve a small amount of pasta water, then drain the pasta.
In a large pan, sauté garlic in olive oil over medium heat.
Add roasted tomatoes with their juices.
Toss in cooked spaghetti and mix well.
Add a splash of reserved pasta water if needed.
Stir in fresh basil and sprinkle with parmesan cheese.
Serve warm.
