Ingredients

  • 12 Medjool dates
  • 4 oz blue cheese
  • 6 slices prosciutto
  • 1 tablespoon olive oil
  • 1/4 teaspoon black pepper
  • Optional: chopped walnuts or pecans
  • Optional: honey drizzle
  • Optional: fresh thyme
  • Optional: balsamic glaze
  • Optional: crushed pistachios

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Slice each date lengthwise and remove the pit.
  3. Stuff each date with a small amount of blue cheese.
  4. Cut the prosciutto slices into strips if needed.
  5. Wrap each stuffed date with prosciutto and secure with a toothpick if necessary.
  6. Arrange the wrapped dates on the prepared baking sheet.
  7. Lightly brush or drizzle the dates with olive oil.
  8. Bake for 12 to 15 minutes, or until the prosciutto is crispy and the cheese is warm.
