Strawberry Galette is a rustic free-form tart featuring a flaky, buttery crust wrapped around a juicy strawberry filling. Baked until golden and bubbling, it’s an easy yet elegant dessert that’s perfect for showcasing fresh strawberries.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 45 tbsp ice water
  • 4 cups fresh strawberries, sliced
  • 1/3 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 1 large egg, beaten (for egg wash)
  • 1 tbsp coarse sugar
  • Vanilla ice cream or whipped cream, optional for serving

Instructions

  1. In a large bowl, combine the flour, granulated sugar, and salt.
  2. Cut the cold butter into the flour mixture until it resembles coarse crumbs.
  3. Gradually add the ice water, mixing just until the dough comes together.
  4. Shape the dough into a disk, wrap it, and refrigerate for at least 30 minutes.
  5. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  6. In a separate bowl, toss the sliced strawberries with the sugar, cornstarch, lemon juice, lemon zest, and vanilla extract.
  7. Roll the chilled dough into a 12-inch circle on a lightly floured surface and transfer it to the prepared baking sheet.
  8. Spoon the strawberry filling into the center, leaving a 2-inch border around the edges.
  9. Fold the edges of the dough over the filling, leaving the center exposed.
  10. Brush the crust with the beaten egg and sprinkle with coarse sugar.
  11. Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  12. Allow the galette to cool slightly before serving with vanilla ice cream or whipped cream if desired.

  • Frozen strawberries may be used if thawed and thoroughly drained before mixing the filling.
  • Chilling the dough helps create a flaky, tender crust.
  • Add blueberries, raspberries, peaches, or sliced almonds for delicious variations.
