Ingredients

  • Boneless skinless chicken breasts
  • Salsa
  • Shredded cheddar cheese
  • Shredded Monterey Jack cheese
  • Olive oil
  • Garlic powder
  • Chili powder
  • Ground cumin
  • Salt
  • Black pepper
  • Fresh cilantro, chopped
  • Lime wedges for serving
  • Sliced jalapeños (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a baking dish with olive oil.
  3. Arrange the chicken breasts in a single layer in the baking dish.
  4. Season the chicken with garlic powder, chili powder, cumin, salt, and black pepper.
  5. Spoon the salsa evenly over the chicken.
  6. Cover the dish loosely with aluminum foil.
  7. Bake for 20 minutes.
  8. Remove the foil and sprinkle the cheddar and Monterey Jack cheeses over the chicken.
  9. Return the dish to the oven and bake for an additional 10 to 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  10. Allow the chicken to rest for 5 minutes before serving.
  11. Garnish with fresh cilantro and sliced jalapeños if desired.
