Ingredients

  • 2 cups rotisserie chicken, shredded
  • 4 large flour tortillas
  • 2 cups cooked rice
  • 1 cup black beans or pinto beans, drained and rinsed
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 tbsp taco seasoning
  • 1 avocado, sliced (optional)
  • 1 jalapeño, sliced (optional)
  • 1/2 cup corn kernels (optional)
  • 2 tbsp chopped cilantro (optional)
  • Hot sauce, to taste (optional)
  • 1 tbsp lime juice (optional)

Instructions

  1. Shred the rotisserie chicken into bite-sized pieces.
  2. In a skillet over medium heat, warm the chicken with taco seasoning and a few tablespoons of salsa until heated through.
  3. Warm the tortillas slightly to make them easier to roll.
  4. Lay each tortilla flat and layer rice, beans, chicken, cheese, lettuce, tomatoes, and any desired toppings.
  5. Add sour cream, salsa, hot sauce, or lime juice if desired.
  6. Fold in the sides of the tortilla and roll tightly into a burrito.
  7. Serve immediately or toast the burritos lightly in a skillet until golden and crispy.

  • Whole wheat tortillas or cauliflower rice can be used for a lighter option.
