A crisp and colorful red cabbage coleslaw tossed in a creamy, tangy dressing, perfect as a refreshing side for any meal.

Ingredients

  • 4 cups red cabbage, finely shredded
  • 1 cup carrots, grated
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the shredded red cabbage, grated carrots, and sliced red onion.
  2. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey or sugar, Dijon mustard, salt, and black pepper until smooth.
  3. Pour the dressing over the vegetables.
  4. Toss everything together until evenly coated.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to blend.
  6. Toss again before serving and adjust seasoning if needed.
  7. Serve chilled.

Notes

  • Substitute Greek yogurt for part of the mayonnaise for a lighter version.
  • Add sliced apples or raisins for a touch of sweetness.
