Buttery pineapple pie bars with a sweet and tangy fruit filling and a crumbly golden topping. These easy-to-make bars bring a bright tropical flavor to any dessert table.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup butter, cold and cubed
  • 1 egg
  • 1 1/2 cups crushed pineapple, drained
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 180°C (350°F) and line a baking pan with parchment paper.
  2. In a bowl, mix flour, granulated sugar, and salt.
  3. Cut in the butter until the mixture becomes crumbly.
  4. Press two-thirds of the mixture into the bottom of the pan to form the crust.
  5. Bake for 10–12 minutes until lightly golden.
  6. In another bowl, combine crushed pineapple, egg, brown sugar, cornstarch, lemon juice, and vanilla extract.
  7. Pour the pineapple mixture evenly over the baked crust.
  8. Sprinkle the remaining crumb mixture over the top.
  9. Bake for 25–30 minutes until golden and set.
  10. Cool completely before slicing into bars.
