A cozy, hearty soup that captures the classic flavors of lasagna with seasoned meat, tender pasta, and rich tomato broth. Made in one pot, it’s an easy and comforting meal perfect for busy days.

Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 4 cups chicken or beef broth
  • 8 lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons fresh basil or parsley (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until softened, then stir in garlic.
  3. Add ground beef or sausage and cook until browned.
  4. Stir in tomato paste and cook for 1 minute.
  5. Add crushed tomatoes, broth, Italian seasoning, salt, and pepper, then bring to a simmer.
  6. Add broken lasagna noodles and cook for 10–12 minutes until tender, stirring occasionally.
  7. Taste and adjust seasoning as needed.
  8. Ladle soup into bowls.
  9. Top each serving with ricotta, mozzarella, and parmesan cheese.
  10. Garnish with fresh herbs if desired and serve warm.
