Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp instant yeast
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 1 cup warm milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, diced
  • 1/2 cup brown sugar
  • 2 tsp ground cinnamon
  • 3 tbsp unsalted butter, softened
  • 1 tbsp cornstarch
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • 1 pinch salt

Instructions

  1. Mix the flour, instant yeast, granulated sugar, and salt in a large bowl.
  2. Stir in the warm milk, melted butter, egg, and vanilla extract until a sticky dough forms.
  3. Cover and let the dough rise for 1 1/2 to 2 hours, or until doubled in size.
  4. Combine the brown sugar and cinnamon in a small bowl.
  5. Toss the diced strawberries with the cornstarch to absorb excess moisture.
  6. Roll the dough into a large rectangle on a lightly floured surface.
  7. Spread the softened butter over the dough and sprinkle evenly with the cinnamon sugar mixture.
  8. Scatter the strawberries over the filling, then roll the dough tightly into a log.
  9. Slice into 12 equal rolls and arrange them in a greased baking dish.
  10. Let the rolls rise for 30 to 45 minutes, then bake at 350°F (175°C) for 30 to 35 minutes, or until golden brown.
  11. Whisk together the cream cheese, powdered sugar, vanilla extract, milk, and salt until smooth.
  12. Spread the glaze over the warm rolls before serving.

Notes

  • Add strawberry jam with the fresh strawberries for a richer filling.
  • Substitute raspberries, blueberries, or mixed berries for the strawberries.
  • Add chopped pecans or walnuts for extra crunch.
  • Mix lemon zest into the filling for a bright citrus flavor.
  • Drizzle with melted white chocolate instead of cream cheese glaze for a sweeter finish.
  • Prepare the rolls the night before and refrigerate before the second rise for easy morning baking.
  • Store glazed rolls in the refrigerator for up to 4 days or freeze unglazed rolls for up to 3 months.
