Ingredients

  • 14 ounces udon noodles
  • 3 cups sliced mushrooms
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon oyster sauce (optional)
  • 1/2 cup vegetable broth
  • 2 green onions, sliced
  • 1 tablespoon olive oil or neutral oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. Clean and slice the mushrooms evenly.
  3. Heat the olive oil in a large skillet or wok over medium heat.
  4. Add the garlic and ginger and cook until fragrant.
  5. Add the mushrooms and sauté for 6 to 8 minutes until softened and lightly browned.
  6. Stir in the soy sauce, sesame oil, oyster sauce, and vegetable broth.
  7. Simmer for 2 to 3 minutes to allow the flavors to combine.
  8. Add the cooked udon noodles to the skillet and toss until evenly coated.
  9. Season with salt and black pepper if needed.
  10. Garnish with sliced green onions and sesame seeds before serving.

  • Shiitake, cremini, oyster, or button mushrooms all work well in this recipe.
  • Frozen udon noodles are convenient and cook quickly.
