Ingredients

  • 1 1/2 lbs chicken thighs or chicken breasts
  • 2 tbsp white or yellow miso paste
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 3 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 tbsp sesame oil
  • 1/4 tsp black pepper
  • 2 cups cooked rice or brown rice
  • 2 cups broccoli florets
  • 2 carrots, sliced
  • 1 cucumber, sliced
  • 2 green onions, sliced
  • 1 tbsp sesame seeds
  • Optional additions: edamame, snap peas, avocado, sriracha, pickled vegetables

Instructions

  1. In a bowl, whisk together the miso paste, honey, soy sauce, garlic, ginger, sesame oil, and black pepper.
  2. Add the chicken and coat thoroughly with the marinade. Let marinate for at least 20 minutes.
  3. Heat a skillet or grill pan over medium heat and cook the chicken until fully cooked and caramelized on the outside.
  4. Allow the chicken to rest for a few minutes before slicing.
  5. Prepare the rice according to package instructions.
  6. Steam or sauté the broccoli and carrots until tender-crisp.
  7. Divide the rice evenly among meal prep containers.
  8. Add the cooked vegetables and sliced chicken to each container.
  9. Garnish with green onions and sesame seeds.
  10. Allow the containers to cool slightly before sealing and refrigerating.
