These mint chip donuts are soft, fluffy, and packed with refreshing mint flavor and rich chocolate chips. Finished with a sweet mint glaze and chocolate topping, they’re a fun baked treat perfect for dessert or special occasions.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 3/4 cup milk
  • 1/4 cup melted butter or oil
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1/2 cup mini chocolate chips
  • Optional: green food coloring
  • For the glaze:
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/4 tsp peppermint extract
  • Melted chocolate or mini chocolate chips for topping

Instructions

  1. Preheat the oven to 350°F and lightly grease a donut pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the eggs, milk, melted butter, vanilla extract, and peppermint extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the mini chocolate chips and add a few drops of green food coloring if desired.
  6. Spoon or pipe the batter into the prepared donut pan, filling each cavity about three-quarters full.
  7. Bake for 12–15 minutes, or until the donuts spring back lightly when touched.
  8. Let the donuts cool for several minutes before transferring them to a wire rack.
  9. To make the glaze, whisk together powdered sugar, milk, and peppermint extract until smooth.
  10. Dip the cooled donuts into the glaze and drizzle with melted chocolate or sprinkle with mini chocolate chips.
  11. Allow the glaze to set before serving.
