Matcha Almond Croissants are flaky buttery pastries filled with creamy almond filling infused with earthy matcha flavor. These elegant bakery-style croissants are perfect for brunch, tea time, or a sophisticated homemade dessert.

Ingredients

  • 4 large croissants
  • Sliced almonds for topping
  • Powdered sugar or matcha powder for garnish
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup almond flour
  • 1 large egg
  • 1 tablespoon matcha powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup water
  • 2 tablespoons sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. If using syrup, combine the water and sugar in a small saucepan and heat until dissolved. Allow to cool slightly.
  3. In a bowl, beat the butter and sugar until smooth and creamy.
  4. Add the almond flour, egg, matcha powder, vanilla extract, and almond extract. Mix until fully combined.
  5. Slice the croissants in half horizontally.
  6. Brush the inside lightly with the syrup if desired.
  7. Spread a generous layer of the matcha almond filling inside each croissant.
  8. Close the croissants and spread a small amount of filling on top.
  9. Sprinkle sliced almonds over the tops.
  10. Bake for 15–18 minutes or until golden and crisp.
  11. Let cool slightly before dusting with powdered sugar or matcha powder.
  12. Serve warm or at room temperature.
