Lemon Feta White Bean and Green Bean Salad is a bright and refreshing salad featuring crisp green beans, creamy white beans, tangy feta cheese, and a zesty lemon dressing. It’s a wholesome and satisfying dish perfect for lunches, side dishes, and gatherings.

Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 (15-ounce) can white beans, drained and rinsed
  • 3/4 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the green beans and cook for 3 to 4 minutes until tender-crisp.
  3. Transfer the green beans to a bowl of ice water to stop the cooking process.
  4. Drain and pat the green beans dry.
  5. In a large bowl, combine the green beans, white beans, red onion, parsley, and feta cheese.
  6. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, salt, and black pepper.
  7. Pour the dressing over the salad and gently toss to coat.
  8. Taste and adjust seasoning as needed.
  9. Chill for 15 to 30 minutes before serving.
  10. Serve cold or at room temperature.
