Leftover Mashed Potato Balls

Crispy on the outside and soft on the inside, these mashed potato balls turn leftovers into a golden, bite-sized snack or side dish.

Ingredients

  • 2 cups leftover mashed potatoes
  • 1 egg
  • 1/2 cup shredded cheese (optional)
  • 2 tablespoons green onions or herbs, chopped
  • 1/2 cup all-purpose flour
  • 1 cup breadcrumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying

Instructions

  1. In a bowl, combine mashed potatoes, egg, cheese, and herbs.
  2. Season with salt and pepper and mix well.
  3. Scoop portions and roll into small balls.
  4. Coat each ball lightly in flour, then roll in breadcrumbs.
  5. Heat oil in a deep pan over medium heat.
  6. Fry potato balls in batches until golden and crispy.
  7. Remove and drain on paper towels.
  8. Serve warm.

Notes

  • Add bacon bits or diced ham for extra flavor.
  • Place a cube of cheese inside for a melty center.
  • Bake or air fry for a lighter option.
