Lazy Lasagna is a quick and comforting one-pan pasta dish with all the classic flavors of traditional lasagna. Tender pasta, hearty meat sauce, creamy ricotta, and melted mozzarella make it a perfect weeknight dinner.

Ingredients

  • Rotini, penne, bowtie, or broken lasagna noodles
  • Ground beef or Italian sausage
  • Onion, diced
  • Garlic, minced
  • Marinara or pasta sauce
  • Diced tomatoes
  • Italian seasoning
  • Salt
  • Black pepper
  • Ricotta cheese or cottage cheese
  • Shredded mozzarella cheese
  • Grated Parmesan cheese
  • Fresh parsley or basil, chopped (optional)

Instructions

  1. Cook the pasta according to the package directions until al dente. Drain and set aside.
  2. In a large skillet or Dutch oven, cook the ground beef or Italian sausage over medium heat until browned.
  3. Add the diced onion and cook for 4–5 minutes until softened.
  4. Stir in the minced garlic and cook for 30 seconds.
  5. Add the marinara sauce, diced tomatoes, Italian seasoning, salt, and black pepper. Simmer for 10 minutes.
  6. Stir the cooked pasta into the meat sauce until evenly coated.
  7. Dollop the ricotta or cottage cheese throughout the pasta mixture and gently stir to create creamy pockets.
  8. Sprinkle the mozzarella and Parmesan evenly over the top.
  9. Cover and cook over low heat for 5–8 minutes until the cheese is melted and bubbly, or broil for 2–3 minutes until lightly browned.
  10. Garnish with fresh parsley or basil before serving.

Notes

  • Use any short pasta or broken lasagna noodles.
  • Cottage cheese is a great substitute for ricotta.
  • Add mushrooms, spinach, or zucchini for extra vegetables.
  • Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
  • Serve with garlic bread or a fresh green salad.
