These Lasagna Roll Ups combine all the comforting flavors of classic lasagna in perfectly portioned rolls filled with creamy cheese, topped with rich marinara, and baked until bubbly and golden. They’re perfect for family dinners, meal prep, or entertaining.

Ingredients

  • 12 lasagna noodles
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach, chopped (optional)
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups marinara sauce
  • 1 tablespoon olive oil
  • Fresh basil, for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the lasagna noodles according to the package directions until al dente. Drain and lay them flat to cool.
  3. In a large bowl, combine the ricotta cheese, 1 cup of mozzarella, Parmesan cheese, egg, garlic, Italian seasoning, parsley, salt, black pepper, and spinach if using.
  4. Spread a thin layer of marinara sauce over the bottom of the prepared baking dish.
  5. Spread the cheese mixture evenly over each cooked noodle.
  6. Roll each noodle tightly and place it seam-side down in the baking dish.
  7. Spoon the remaining marinara sauce over the roll ups and sprinkle with the remaining mozzarella cheese.
  8. Cover the dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10 to 15 minutes, until the cheese is melted, bubbly, and lightly golden.
  10. Garnish with fresh basil if desired and serve warm.

Notes

  • Add cooked ground beef or Italian sausage for a heartier version.
  • Mix chopped mushrooms or sautéed zucchini into the filling for extra vegetables.
  • Substitute cottage cheese for ricotta if preferred.
  • Use Alfredo sauce instead of marinara for a creamy variation.
  • Add crushed red pepper flakes for a spicy kick.
  • Assemble the roll ups up to 1 day ahead and refrigerate before baking.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
  • Reheat in a 350°F (175°C) oven until hot for the best texture.
