Grilled Peach and Burrata Salad is a fresh and elegant summer dish featuring sweet caramelized peaches, creamy burrata cheese, peppery greens, and a tangy balsamic dressing. Light yet satisfying, it is perfect for entertaining, lunches, or warm-weather dinners.

Ingredients

  • 4 ripe peaches, halved and pitted
  • 1 tablespoon olive oil
  • 8 ounces burrata cheese
  • 5 cups arugula or mixed greens
  • 1/4 cup fresh basil leaves
  • 1/4 cup toasted pecans or walnuts
  • 2 tablespoons prosciutto, torn (optional)
  • 2 tablespoons balsamic glaze
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat a grill or grill pan to medium-high heat.
  2. Lightly brush the peach halves with olive oil.
  3. Place the peaches cut-side down on the grill.
  4. Grill for 2–3 minutes per side until grill marks appear and the peaches are slightly softened.
  5. Remove the peaches from the grill and allow them to cool slightly.
  6. In a small bowl, whisk together the balsamic glaze, lemon juice, honey, salt, and black pepper.
  7. Arrange the arugula or mixed greens on a large serving platter.
  8. Tear the burrata into pieces and distribute it over the greens.
  9. Slice the grilled peaches and arrange them around the burrata.
  10. Sprinkle with fresh basil leaves, toasted nuts, and prosciutto if using.
  11. Drizzle the dressing evenly over the salad.
  12. Serve immediately.

Notes

  • Fresh ripe peaches provide the best flavor and texture for grilling.
  • Omit the prosciutto for a vegetarian version.
  • Pistachios, pine nuts, or almonds can replace the pecans or walnuts.
  • Assemble just before serving to keep the greens fresh.
  • Grilled peaches can be prepared ahead and served chilled or at room temperature.
