Green goddess dressing is a fresh, creamy, and herb-packed sauce with a bright, tangy flavor that enhances salads, vegetables, and grilled dishes.

Ingredients

  • 1/2 cup fresh parsley (chopped)
  • 1/4 cup fresh chives (chopped)
  • 1/4 cup fresh basil or tarragon (chopped)
  • 1/2 cup Greek yogurt or mayonnaise
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice or vinegar
  • 1 clove garlic
  • 2 anchovy fillets (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and roughly chop the fresh herbs.
  2. In a blender or food processor, combine herbs, Greek yogurt or mayonnaise, olive oil, lemon juice or vinegar, garlic, and anchovies if using.
  3. Blend until smooth and creamy.
  4. Taste and season with salt and black pepper.
  5. Add a little water or extra olive oil if needed to adjust consistency.
  6. Transfer to a container and refrigerate for at least 30 minutes before serving.

Notes

  • Use all Greek yogurt for a lighter version.
  • Add avocado for extra creaminess.
  • Replace anchovies with capers for a vegetarian option.
  • Store in the refrigerator for up to 4 days.
  • Stir before serving if separation occurs.
