Ingredients

  • 3 cups cooked chicken breast, shredded or diced
  • 1 cup cucumber, diced
  • 2 celery stalks, finely chopped
  • 2 green onions, sliced
  • 1 avocado, diced
  • 2 cups chopped romaine lettuce or mixed greens
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • 1/4 cup fresh parsley
  • 2 tablespoons fresh chives
  • 2 tablespoons fresh dill
  • 1 tablespoon fresh basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a blender or food processor, combine the Greek yogurt, mayonnaise, lemon juice, garlic, parsley, chives, dill, basil, salt, and black pepper.
  2. Blend until smooth and creamy.
  3. In a large mixing bowl, combine the chicken, cucumber, celery, green onions, avocado, and lettuce.
  4. Pour the Green Goddess dressing over the salad.
  5. Toss gently until all ingredients are evenly coated.
  6. Taste and adjust seasoning if needed.
  7. Serve immediately or chill for 20–30 minutes before serving.

  • Rotisserie chicken works well as a convenient substitute for cooked chicken breast.
