Ingredients

  • 1 1/2 pounds fresh green beans, trimmed
  • 3 shallots, thinly sliced
  • 1/4 cup all-purpose flour, divided
  • 3 tablespoons butter
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken or vegetable broth
  • 1 cup heavy cream or milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • 1/4 cup Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Trim the green beans and blanch them in boiling salted water for 4–5 minutes until bright green and slightly tender.
  3. Transfer the green beans immediately to ice water to stop the cooking process, then drain well.
  4. Thinly slice the shallots and toss them lightly with 2 tablespoons of the flour.
  5. Heat vegetable oil in a skillet and fry the shallots until golden brown and crispy. Drain on paper towels.
  6. In a large skillet, melt the butter over medium heat.
  7. Add the mushrooms and cook until softened and browned.
  8. Stir in the garlic and cook for about 1 minute.
  9. Sprinkle the remaining flour into the skillet and stir to form a roux.
  10. Slowly whisk in the broth and cream until smooth and thickened.
  11. Season with salt and black pepper.
  12. Fold the green beans into the creamy mushroom sauce.
  13. Transfer the mixture to a greased baking dish.
  14. Bake for 20 minutes until hot and bubbly.
  15. Top with fried shallots and optional Parmesan cheese before serving.
