Ingredients

  • 1 pound fresh asparagus, trimmed and chopped
  • 1 tablespoon olive oil or butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream or milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Fresh parsley or chives for garnish

Instructions

  1. Heat the olive oil or butter in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the garlic and cook for another 30 seconds until fragrant.
  4. Add the chopped asparagus and cook for 3 to 4 minutes, stirring occasionally.
  5. Pour in the broth and bring the mixture to a gentle boil.
  6. Reduce the heat and simmer for 15 to 20 minutes until the asparagus becomes tender.
  7. Use an immersion blender to blend the soup until smooth, or carefully transfer it to a blender in batches.
  8. Stir in the heavy cream, salt, black pepper, and lemon juice.
  9. Heat gently for another 2 to 3 minutes without boiling.
  10. Serve warm garnished with fresh parsley or chives.
