Crispy on the outside and tender inside, these tuna and potato patties are an easy, budget-friendly dish packed with flavor.

Ingredients

  • 2 cups mashed potatoes
  • 1 can (5 oz) tuna, drained
  • 1 egg
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley or herbs, chopped
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying

Instructions

  1. In a bowl, combine mashed potatoes and tuna.
  2. Add egg, onion, garlic, and herbs, mixing well.
  3. Season with salt and pepper.
  4. Shape mixture into small patties.
  5. Coat each patty lightly with breadcrumbs.
  6. Heat oil in a pan over medium heat.
  7. Fry patties in batches until golden and crispy on both sides.
  8. Remove and drain on paper towels.
