These crispy air fryer beet chips are a light, crunchy snack made with simple ingredients and minimal oil. Naturally sweet beets are seasoned and air fried until perfectly crisp for a healthier alternative to traditional chips.

Ingredients

  • 2 medium fresh beets, peeled
  • 1 tablespoon olive oil (or cooking spray)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper (optional)
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon smoked paprika (optional)

Instructions

  1. Wash, peel, and thoroughly dry the beets.
  2. Slice the beets into very thin, even rounds using a mandoline or sharp knife.
  3. Pat the slices dry with paper towels to remove excess moisture.
  4. Toss the beet slices with olive oil and the seasonings until evenly coated.
  5. Preheat the air fryer to 325°F (163°C).
  6. Arrange the beet slices in a single layer in the air fryer basket without overlapping.
  7. Air fry for 12 to 15 minutes, flipping or shaking the basket halfway through. Watch closely during the last few minutes to prevent burning.
  8. Allow the chips to cool for a few minutes before serving so they become even crispier.

Notes

  • Sprinkle with Parmesan cheese after cooking for extra flavor.
  • Try chili powder, cayenne pepper, ranch seasoning, rosemary, or thyme for different flavor variations.
  • Combine red, golden, and Chioggia beets for a colorful batch.
  • Store in an airtight container at room temperature for up to 3 days.
  • Reheat in the air fryer at 325°F for 1 to 2 minutes to restore crispness.
