Ingredients
1 lb fresh spinach or 10 oz frozen spinach, thawed and drained
2 tablespoons butter
2 cloves garlic, minced
1 small onion, finely chopped
1 cup heavy cream
4 oz cream cheese
1/3 cup grated parmesan cheese
1/4 teaspoon nutmeg (optional)
Salt and pepper to taste
Instructions
If using fresh spinach, cook it in a large pan until wilted, then drain and chop. If using frozen spinach, ensure it is fully thawed and excess moisture is squeezed out.
In a skillet over medium heat, melt the butter and sauté the onion and garlic until soft and fragrant.
Add the heavy cream and cream cheese, stirring until smooth and well combined.
Stir in the parmesan cheese and nutmeg if using.
Add the spinach and mix until fully coated and heated through.
Season with salt and pepper to taste.
Serve warm.
Notes
Use half-and-half or milk for a lighter version.
Add extra garlic for a stronger flavor.
Mix in mozzarella or Gruyère for extra richness.
For a vegan version, use plant-based dairy alternatives.
Store leftovers in the refrigerator for up to 3 days and reheat gently with a splash of cream or milk.
