A classic spinach quiche featuring a creamy egg custard filled with tender spinach and melted cheese, all baked in a flaky crust. Perfect for breakfast, brunch, or a light dinner.

Ingredients

  • 1 pie crust
  • 2 cups fresh or frozen spinach (thawed and drained)
  • 4 eggs
  • 1 cup milk or cream
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (such as Swiss or cheddar)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon nutmeg (optional)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. If using frozen spinach, thaw and squeeze out excess moisture.
  3. In a skillet, sauté onion and garlic until softened. Add spinach and cook briefly, then remove from heat.
  4. In a bowl, whisk together eggs, milk or cream, salt, pepper, and nutmeg if using.
  5. Place the pie crust in a baking dish and spread the spinach mixture evenly over the base.
  6. Sprinkle shredded cheese over the spinach.
  7. Pour the egg mixture over the filling evenly.
  8. Bake for 35 to 40 minutes until the center is set and the top is lightly golden.
  9. Let cool slightly before slicing and serving.

  • Pre-bake the crust slightly to avoid sogginess.
  • Add bacon, ham, or mushrooms for variation.
  • Use feta cheese for a tangier flavor.
