  • 4 oz cream cheese, softened
  • 1/2 cup finely diced celery
  • 3 green onions, sliced
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: halved grapes
  • Optional: chopped pecans or walnuts
  • Optional: dried cranberries
  • Optional: spinach leaves

  • Optional: ranch seasoning

Instructions

  1. In a large bowl, combine the mayonnaise or Greek yogurt, cream cheese, garlic powder, salt, and black pepper until smooth.
  2. Stir in the shredded chicken, celery, green onions, and shredded cheddar cheese.
  3. Add any optional ingredients such as grapes, nuts, dried cranberries, or bacon.
  4. Lay the tortillas flat on a clean work surface.
  5. Spread the chicken salad mixture evenly over each tortilla.
  6. Roll the tortillas tightly into log shapes.
  7. Wrap tightly in plastic wrap and refrigerate for at least 30 minutes.
  8. Remove from the refrigerator and slice into 1-inch pinwheels.
  9. Arrange on a serving platter and serve chilled.

Notes

  • Rotisserie chicken is a convenient option for quick preparation.
  • Greek yogurt can be used instead of mayonnaise for a lighter version.
  • Roll tightly and chill before slicing to help the pinwheels hold their shape.
  • Spinach tortillas add extra color and flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freezing is not recommended because the filling may become watery after thawing.
  • Serve chilled for the best texture and flavor.
