Chicken Chasseur is a classic French dish featuring tender chicken simmered in a rich tomato, mushroom, and herb sauce with white wine. This comforting and flavorful meal is perfect for both casual dinners and special occasions.

Ingredients

  • Chicken thighs or breasts
  • Olive oil or butter
  • Mushrooms, sliced
  • Onion, chopped
  • Garlic, minced
  • Tomatoes (fresh or canned)
  • Tomato paste
  • White wine
  • Chicken broth
  • Fresh thyme or tarragon
  • Salt and pepper
  • Fresh parsley (for garnish)

Instructions

  1. Season the chicken with salt and pepper.
  2. Heat olive oil or butter in a large skillet over medium heat and brown the chicken on both sides. Remove and set aside.
  3. In the same pan, cook the mushrooms until browned.
  4. Add onion and garlic, and sauté until softened.
  5. Stir in tomato paste and cook briefly to enhance flavor.
  6. Pour in white wine and simmer for a few minutes.
  7. Add tomatoes, chicken broth, and herbs, then stir well.
  8. Return the chicken to the pan, cover, and simmer for 25–30 minutes until fully cooked.
  9. Garnish with fresh parsley and serve warm.

  • Substitute white wine with extra chicken broth if preferred.
  • Add a splash of cream for a richer variation.
  • Use cremini or button mushrooms for best flavor.
