Chicken Alfredo Zoodles are a lighter take on classic Alfredo, featuring tender chicken, fresh zucchini noodles, and a rich homemade Parmesan cream sauce. This low-carb meal is creamy, satisfying, and perfect for a quick weeknight dinner.

Ingredients

  • 1 pound boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 medium zucchini, spiralized
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • Chopped fresh parsley, for garnish (optional)
  • Extra Parmesan cheese, for garnish (optional)
  • Cracked black pepper, for garnish (optional)

Instructions

  1. Season the chicken with Italian seasoning, salt, and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Cook the chicken for 5–6 minutes per side until golden brown and fully cooked.
  4. Transfer the chicken to a cutting board and let it rest before slicing.
  5. In the same skillet, melt the butter over medium heat.
  6. Add the garlic and cook for about 30 seconds until fragrant.
  7. Pour in the heavy cream and stir well.
  8. Simmer gently for 2–3 minutes.
  9. Add the Parmesan cheese and black pepper, stirring until smooth and creamy.
  10. Stir in the nutmeg if using.
  11. Add the zucchini noodles and toss gently for 2–3 minutes until just tender.
  12. Avoid overcooking the zoodles to prevent excess moisture.
  13. Slice the chicken and place it over the Alfredo zoodles.
  14. Garnish with parsley, additional Parmesan cheese, and cracked black pepper if desired.
  15. Serve immediately.

  • Pat zucchini noodles dry before cooking for the best texture.
