Ingredients

  • 1 lb ground beef
  • 2 cups potatoes, thinly sliced
  • 1 cup carrots, sliced
  • 1 zucchini, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • salt
  • black pepper
  • Optional toppings:
  • 4 cheese slices
  • fresh parsley

Instructions

  1. Preheat grill to medium heat or oven to 400°F (200°C).
  2. Divide ground beef into 4 portions and shape into patties. Season both sides with salt, black pepper, garlic powder, and paprika.
  3. Prepare large sheets of aluminum foil and lightly coat the center of each with olive oil.
  4. Layer sliced potatoes, carrots, zucchini, and onion on each foil sheet. Drizzle with olive oil and season with salt and pepper.
  5. Place a beef patty on top of the vegetables and add a cheese slice if desired.
  6. Fold the foil over the ingredients and seal tightly to form packets.
  7. Place foil packs on the grill or in the oven and cook for 25 to 30 minutes until beef is fully cooked and vegetables are tender.
  8. Carefully open the packets, garnish with fresh parsley if desired, and serve hot.

Notes

  • Swap ground beef for turkey or chicken for a lighter option.
  • Add bell peppers, mushrooms, or corn for more variety.
  • Include a splash of Worcestershire or barbecue sauce for extra flavor.
  • Use sweet potatoes instead of regular potatoes for a sweeter taste.
  • Store leftovers in the refrigerator for up to 3 days.
  • Reheat in a skillet, oven, or microwave until warmed through.
