Ingredients

  • 4 large croissants, sliced in half
  • 8 slices bacon
  • 4 large eggs
  • 4 lettuce leaves
  • 1 large tomato, sliced
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon butter
  • Salt, to taste
  • Black pepper, to taste
  • 4 slices cheddar or Swiss cheese (optional)

Instructions

  1. Cook the bacon in a skillet or oven until crispy, then transfer it to a paper towel-lined plate.
  2. Melt the butter in a skillet over medium heat.
  3. Cook the eggs to your preferred style, such as fried or folded, and season with salt and black pepper.
  4. Lightly toast the croissant halves until warm and lightly crisp.
  5. Spread the mayonnaise and Dijon mustard on the inside of each croissant if using.
  6. Place a lettuce leaf on the bottom half of each croissant.
  7. Add the cooked egg, followed by the crispy bacon.
  8. Layer the tomato slices on top and add a slice of cheese if desired.
  9. Top with the remaining croissant halves and serve immediately.

Notes

  • Use thick-cut bacon for extra crunch and flavor.
  • Add avocado, pesto, garlic aioli, or pepper jack cheese for delicious variations.
  • Turkey bacon and spinach make a lighter alternative.
  • Store cooked bacon and eggs separately in the refrigerator for up to 3 days.
  • Assemble the sandwiches just before serving to keep the croissants flaky.
  • Serve with fresh fruit, breakfast potatoes, hash browns, yogurt, or a smoothie.
