Ingredients

  • 16 Biscoff cookies
  • 2 cups vanilla ice cream, softened
  • 1/4 cup Biscoff cookie butter spread
  • 1/2 cup crushed Biscoff cookies
  • 1/4 cup white chocolate chips or mini chocolate chips (optional)

Instructions

  1. Allow the ice cream to soften slightly at room temperature until easy to scoop.
  2. Spread a thin layer of Biscoff cookie butter on the flat side of 8 Biscoff cookies.
  3. Place a scoop of softened ice cream onto each cookie.
  4. Top with the remaining Biscoff cookies and gently press together to form sandwiches.
  5. Smooth the exposed ice cream edges with a spatula or knife if needed.
  6. Roll the edges in crushed Biscoff cookies or chocolate chips.
  7. Arrange the sandwiches on a parchment-lined baking sheet.
  8. Freeze for at least 2 hours, or until firm.
