Baked cauliflower potato patties are crispy on the outside and soft on the inside, made with simple vegetables and baked to golden perfection. A wholesome and versatile dish perfect for any meal.

Ingredients

  • cauliflower
  • potatoes
  • egg
  • breadcrumbs
  • onion
  • garlic
  • olive oil
  • salt
  • black pepper
  • fresh herbs (such as parsley or chives)
  • grated cheese (optional)

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking tray.
  2. Boil or steam cauliflower until tender, then drain well.
  3. Boil potatoes until soft, then drain.
  4. Mash potatoes and cauliflower together until mostly smooth.
  5. Sauté onion in oil until soft, then add garlic.
  6. Add onion mixture to mashed vegetables.
  7. Mix in egg, breadcrumbs, salt, pepper, and herbs.
  8. Add cheese if using and mix well.
  9. Shape into patties and place on baking tray.
  10. Brush with olive oil.
  11. Bake for 20–25 minutes, flipping halfway, until golden.
  12. Serve warm.
