Ingredients
12 oz cheese tortellini
20 slices salami or pepperoni
1 cup cherry tomatoes
1 cup mozzarella balls
1/2 cup black or green olives
1 cucumber, sliced
1/2 cup roasted red peppers
1/3 cup olive oil
2 tbsp lemon juice
1 tsp lemon zest
1 tsp Dijon mustard
2 cloves garlic, minced
2 tbsp fresh basil, chopped
1/2 tsp salt
1/4 tsp black pepper
Instructions
Cook tortellini according to package instructions, then drain and let cool completely.
In a small bowl, whisk together olive oil, lemon juice, lemon zest, Dijon mustard, garlic, basil, salt, and black pepper.
Thread skewers with tortellini, salami or pepperoni, cherry tomatoes, mozzarella balls, olives, cucumber slices, and roasted red peppers in alternating order.
Arrange skewers on a serving platter.
Drizzle vinaigrette over the skewers or serve on the side.
Garnish with extra basil if desired and serve chilled or at room temperature.

Make ahead and refrigerate up to 2 days for convenience.
