Soft and coffee-infused tiramisu cookies made in the air fryer, topped with a creamy mascarpone frosting and dusted with cocoa. A quick and indulgent twist on the classic dessert.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant coffee or espresso powder
  • 2 tablespoons milk
  • 1/2 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Cocoa powder for dusting

Instructions

  1. In a bowl, whisk together flour, baking powder, and salt.
  2. In another bowl, beat butter and sugar until light and fluffy.
  3. Add egg and vanilla extract, mixing well.
  4. Dissolve coffee in milk and add to the mixture.
  5. Gradually mix in dry ingredients until a soft dough forms.
  6. Preheat air fryer to 320°F (160°C).
  7. Scoop dough portions onto parchment paper or an air fryer-safe tray.
  8. Air fry for 8 to 10 minutes until edges are lightly golden.
  9. Cool cookies completely.
  10. Beat mascarpone, heavy cream, powdered sugar, and vanilla until smooth and fluffy.
  11. Spread or pipe topping onto cooled cookies.
  12. Dust with cocoa powder before serving.

Notes

  • Do not overcrowd the air fryer for even cooking.
  • Add chocolate chips or drizzle melted chocolate for extra richness.
  • Use cream cheese instead of mascarpone if needed.
  • Store frosted cookies in the refrigerator for up to 3 days.
  • Unfrosted cookies can be frozen for longer storage.
  • Let chilled cookies sit at room temperature before serving.
