Ingredients
2 medium beets, peeled and spiralized
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dried thyme or rosemary (optional)
Fresh parsley, chopped, for garnish (optional)
Fresh lemon juice, for serving (optional)
Instructions
Peel the beets and spiralize them into long strands.
Pat the spiralized beets dry with paper towels to remove excess moisture.
Toss the beets with the olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and dried herbs if using.
Preheat the air fryer to 375°F (190°C).
Arrange the seasoned beets in an even layer in the air fryer basket without overcrowding.
Air fry for 10–14 minutes, shaking the basket halfway through, until the beets are tender with lightly crispy edges.
Transfer the roasted beets to a serving dish.
