Air Fryer Corn Casserole is a rich, creamy side dish made with sweet corn, cornbread mix, sour cream, butter, and optional cheddar cheese, all cooked to golden perfection in the air fryer. It’s a quick and comforting recipe that’s perfect for holidays, family dinners, potlucks, or barbecues.

Ingredients

  • 1 can whole kernel corn, drained
  • 1 can cream-style corn
  • 1 box cornbread mix
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup shredded cheddar cheese (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Chopped green onions or fresh parsley (optional, for garnish)

Instructions

  1. Preheat the air fryer to 320°F (160°C) if required by your model.
  2. Lightly grease a 7-inch air fryer-safe baking dish or cake pan.
  3. In a large bowl, combine the whole kernel corn, cream-style corn, cornbread mix, sour cream, melted butter, eggs, garlic powder, onion powder, salt, and black pepper until well mixed.
  4. Fold in the shredded cheddar cheese if using.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Place the dish into the air fryer basket.
  7. Cook for 25–35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. If the top browns too quickly, loosely cover the dish with aluminum foil during the final 10 minutes of cooking.
  9. Carefully remove the casserole from the air fryer and let it rest for 5–10 minutes before serving.
  10. Garnish with chopped green onions or fresh parsley if desired.

Notes

  • Thaw and drain frozen corn before using if substituting for canned corn.
  • Add cooked bacon, diced ham, jalapeños, or green chilies for extra flavor.
  • Use Pepper Jack or Monterey Jack cheese instead of cheddar for a different twist.
  • Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
