Ingredients

  • 2 blood oranges, peeled and sliced into rounds
  • 2 grapefruits, peeled and segmented
  • 1/4 small red onion, very thinly sliced
  • 1/3 cup shelled pistachios, roughly chopped
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon red pepper flakes
  • Extra pistachios for serving

Instructions

  1. Arrange the orange slices, blood orange slices, and grapefruit segments on a large serving platter.
  2. Scatter the thinly sliced red onion over the citrus.
  3. In a small bowl, whisk together the olive oil, lemon juice, honey or maple syrup, sea salt, and black pepper.
  4. Drizzle the dressing evenly over the citrus.
  5. Sprinkle the chopped pistachios across the salad.
