This Zucchini Cacio e Pepe with Brown Butter is a simple yet elegant dish featuring tender zucchini, nutty brown butter, bold black pepper, and savory Parmesan or Pecorino Romano cheese. It’s a quick, flavorful recipe that’s perfect as a light main course or an impressive side dish.

Ingredients

  • 2 medium zucchini, sliced into thin rounds or ribbons
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced (optional)
  • 1 teaspoon freshly cracked black pepper
  • 1 cup freshly grated Parmesan or Pecorino Romano cheese
  • 2 tablespoons olive oil
  • Salt, to taste
  • Fresh parsley, chopped (optional, for garnish)
  • Lemon zest (optional, for serving)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the zucchini and cook for 4–6 minutes, stirring occasionally, until tender but still slightly firm.
  3. If using garlic, stir it in during the last minute of cooking until fragrant.
  4. In a separate pan, melt the butter over medium heat and continue cooking until it turns golden brown and develops a nutty aroma.
  5. Pour the brown butter over the cooked zucchini.
  6. Add the freshly cracked black pepper and toss to combine.
  7. Gradually stir in the grated Parmesan or Pecorino Romano until the cheese melts and coats the zucchini.
  8. Taste and season with salt as needed.
  9. Garnish with chopped parsley and lemon zest, if desired, and serve immediately.

Notes

  • Add cooked spaghetti or linguine for a heartier pasta dish.
  • Grilled chicken, shrimp, or white beans make excellent protein additions.
  • Use yellow squash along with the zucchini for extra color.
  • Top with toasted pine nuts or walnuts for added crunch.
  • Add crushed red pepper flakes for a spicy kick.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently with a small pat of butter or splash of olive oil if needed.
