Yemenite Hot Sauce, also known as Zhoug, is a vibrant and spicy herb-based condiment made with fresh cilantro, parsley, hot peppers, garlic, and aromatic spices. This bold Middle Eastern sauce adds fresh heat and flavor to a wide variety of dishes.

Ingredients

  • 2 cups fresh cilantro leaves and tender stems
  • 1 cup fresh parsley leaves
  • 4 to 6 green jalapeños or serrano peppers, stems removed
  • 4 garlic cloves
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lemon
  • 1/3 cup extra-virgin olive oil

Instructions

  1. Wash and thoroughly dry the cilantro, parsley, and peppers.
  2. Roughly chop the herbs and peppers.
  3. Add the cilantro, parsley, peppers, garlic, cumin, coriander, cardamom, salt, and black pepper to a food processor.
  4. Pulse several times until finely chopped.
  5. Add the lemon juice.
  6. With the processor running, slowly drizzle in the olive oil.
  7. Process until a coarse sauce forms, avoiding a completely smooth purée.
  8. Taste and adjust seasoning as needed.
  9. Transfer the sauce to a clean jar or airtight container.
  10. Refrigerate for at least 30 minutes before serving to allow the flavors to develop.

Notes

  • Use serrano peppers for a hotter sauce or jalapeños for a milder version.
  • Remove pepper seeds to reduce the heat level.
  • Add fresh mint for a refreshing variation.
  • Do not over-process the herbs to avoid bitterness.
  • Freeze in ice cube trays for convenient portions.
  • Store in an airtight container in the refrigerator for up to 2 weeks.
