Crispy baked yellow squash tots that are golden on the outside and tender inside, offering a lighter twist on a classic snack. Perfect as an appetizer, side dish, or fun veggie-packed treat.

Ingredients

  • 2 cups yellow squash, grated
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/3 cup parmesan cheese, grated
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Grate the yellow squash and squeeze out as much moisture as possible using a clean towel.
  3. Transfer squash to a mixing bowl.
  4. Add egg, breadcrumbs, parmesan cheese, garlic powder, onion powder, salt, and black pepper.
  5. Mix until well combined and the mixture holds together.
  6. Scoop small portions and shape into tot-like cylinders.
  7. Place on the prepared baking sheet with space between each tot.
  8. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  9. Serve warm with your favorite dipping sauce.

  • Squeeze out excess moisture thoroughly to prevent soggy tots.
  • Use panko breadcrumbs for extra crunch.
  • Add cheddar or mozzarella for a cheesier version.
  • Make gluten-free using gluten-free breadcrumbs.
