A smooth, refreshing milk tea made with strong black tea, creamy milk, and sweet wintermelon syrup with subtle caramel-like notes. Serve it over ice or add brown sugar tapioca pearls for a classic bubble tea experience.

Ingredients

  • 2 black tea bags
  • 1 cup hot water
  • 1 cup whole milk or plant-based milk
  • 3–4 tablespoons wintermelon syrup
  • 1/2 teaspoon vanilla extract, optional
  • 1–2 cups ice
  • 1/2 cup quick-cooking black tapioca pearls, optional
  • Water, for cooking tapioca pearls
  • 2 tablespoons brown sugar, for optional boba
  • 1 tablespoon water, for optional brown sugar syrup

Instructions

  1. Place 2 black tea bags in 1 cup hot water and steep for 4–5 minutes. Remove the tea bags and let the tea cool.
  2. Stir 3 tablespoons wintermelon syrup into the cooled tea. Taste and add the remaining 1 tablespoon if a sweeter or stronger wintermelon flavor is desired.
  3. Stir in 1/2 teaspoon vanilla extract, if using.
  4. For optional boba, cook 1/2 cup quick-cooking tapioca pearls in water according to the package directions. Drain when soft and chewy.
  5. Combine 2 tablespoons brown sugar and 1 tablespoon water in a small saucepan. Heat until the sugar dissolves, then add the cooked tapioca pearls and let them sit in the syrup for a few minutes.
  6. Spoon the warm boba into the bottom of a large glass or divide between two smaller glasses. Add 1–2 cups ice.
  7. Pour in the wintermelon tea, followed by 1 cup cold milk. Stir thoroughly to combine.
  8. Taste and add a little more wintermelon syrup if desired. Serve immediately while cold and the boba is chewy.

Notes

  • Wintermelon syrup is already sweet, so begin with 3 tablespoons and adjust after tasting.
  • For a dairy-free version, use oat, soy, almond, or coconut milk.
  • For wintermelon green milk tea, replace the black tea with jasmine green tea.
  • For stronger tea flavor, use an additional tea bag rather than extending the steeping time.
  • For a lighter drink, reduce the milk and increase the brewed tea. Omit the milk entirely for wintermelon iced tea.
  • Brewed tea with wintermelon syrup can be refrigerated in an airtight container for up to 3 days.
  • Milk tea can be refrigerated for 1–2 days. Add fresh ice just before serving.
  • Prepare tapioca pearls shortly before serving because refrigeration can make them firm.
