Wild Garlic Bread

A soft and fragrant wild garlic bread with a golden crust and a tender interior. Infused with fresh, herby flavor, it makes a perfect side or snack.

Ingredients

  • all-purpose flour
  • fresh wild garlic leaves
  • active dry yeast
  • warm water
  • olive oil
  • salt
  • sugar
  • butter (optional)

Instructions

  1. In a small bowl, combine warm water, sugar, and yeast and let sit for 5–10 minutes until foamy.
  2. In a large bowl, mix flour and salt, then add yeast mixture and olive oil to form a dough.
  3. Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.
  4. Finely chop wild garlic leaves and knead them into the dough until evenly distributed.
  5. Place dough in an oiled bowl, cover, and let rise for about 1 hour until doubled in size.
  6. Punch down dough and shape into a loaf or rolls.
  7. Place on a baking tray, cover, and let rise again for 20–30 minutes.
  8. Preheat oven to 200°C (400°F) and bake for 20–25 minutes until golden brown.
  9. Optionally brush with melted butter after baking.
  10. Allow to cool slightly before slicing and serving.

Notes

  • Add grated cheese like parmesan or cheddar for extra flavor.
  • Substitute part of the water with milk for a softer texture.
  • Include olives or sun-dried tomatoes for variation.
  • Shape into flatbread for a crispier result.
  • Store at room temperature for up to 2 days or refrigerate up to 5 days.
  • Freeze for up to 1 month and reheat before serving.
