Ingredients

  • 1 cup ricotta cheese
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 ripe peaches, sliced
  • 1 baguette, sliced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh basil or mint leaves for garnish
  • Optional balsamic glaze for drizzling
  • Optional crushed pistachios or walnuts for topping

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the baguette slices on a baking sheet and brush lightly with olive oil.
  3. Toast the bread slices in the oven for 8–10 minutes, flipping halfway through, until golden and crisp.
  4. While the bread is toasting, place the ricotta cheese in a food processor or bowl and whip until smooth and creamy.
  5. Spread a generous layer of whipped ricotta onto each toasted crostini.
  6. Top with fresh peach slices.
  7. Drizzle lightly with honey and optional balsamic glaze.
  8. Sprinkle with salt, black pepper, and crushed nuts if using.
  9. Garnish with fresh basil or mint leaves before serving.
