This Weight Watchers Pizza Dough is an easy no-yeast crust made with self-rising flour and nonfat Greek yogurt. It comes together quickly and can be rolled thin for a crisp crust or kept thicker for a softer pizza base.

Ingredients

  • 1 cup self-rising flour, plus 2 tablespoons more as needed for handling
  • 1 cup nonfat plain Greek yogurt
  • 1/2 teaspoon garlic powder, optional
  • 1/2 teaspoon Italian seasoning, optional
  • 1/4 teaspoon salt, optional
  • Cooking spray, for the pan

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet or pizza pan with parchment paper or lightly coat it with cooking spray.
  2. Add 1 cup self-rising flour and 1 cup nonfat plain Greek yogurt to a large mixing bowl. Add the garlic powder, Italian seasoning, and salt if using.
  3. Stir the ingredients together until they begin to form a shaggy dough.
  4. Transfer the dough to a lightly floured work surface. Knead for 2 to 3 minutes, until relatively smooth and easy to handle.
  5. If the dough is too sticky, add additional self-rising flour about 1 tablespoon at a time, using only enough to make the dough manageable.
  6. Shape the dough into a ball. Roll or press it into one medium pizza crust, or divide it into smaller portions for individual pizzas.
  7. For a firmer crust, place the shaped dough on the prepared pan and prebake it for 5 to 7 minutes.
  8. Remove the crust from the oven and add pizza sauce, cheese, and desired toppings.
  9. Return the pizza to the oven and bake for 10 to 15 minutes, until the crust is golden around the edges and the toppings are hot.
  10. Remove the pizza from the oven and let it rest for a few minutes before slicing and serving.

Notes

  • Greek yogurt brands vary in moisture content, so additional flour may be needed if the dough is particularly sticky.
  • Add extra flour gradually because using too much can make the finished crust dry or tough.
  • For a crispier crust, roll the dough relatively thin and prebake it for 5 to 7 minutes before adding toppings.
  • If self-rising flour is unavailable, combine 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
  • The dough can also be used for individual pizzas, calzones, breadsticks, or pizza bites, with baking times adjusted according to size and thickness.
  • Prepared dough can be wrapped tightly and refrigerated for up to 24 hours. Let it sit briefly at room temperature before shaping.
  • Weight Watchers Points can vary with ingredient brands, portions, toppings, and the current WW program. Calculate Points using the current WW app and the exact ingredients used.
  • Store leftover baked pizza in an airtight container in the refrigerator for 3 to 4 days.
