4 boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup Italian-style breadcrumbs
1/2 cup grated Parmesan cheese
3 tablespoons olive oil
2 cups marinara sauce
8 ounces fresh mozzarella, sliced
1 cup shredded mozzarella cheese
Fresh basil leaves, for garnish
Fresh parsley, chopped (optional)
Instructions
Preheat the oven to 400°F (200°C).
Pound the chicken breasts to an even thickness and season both sides with salt, black pepper, garlic powder, and Italian seasoning.
Dredge each chicken breast in flour, dip into the beaten eggs, and coat with the breadcrumb and Parmesan cheese mixture.
Heat the olive oil in a cast iron skillet over medium-high heat.
