A Waffle Sandwich layers crisp golden waffles with eggs, melted cheddar, and savory breakfast meat for a quick and satisfying meal. A touch of maple syrup adds the perfect sweet-and-savory finish for breakfast or brunch.

Ingredients

  • 4 prepared waffles
  • 2 large eggs
  • 2 slices cheddar cheese
  • 4 slices cooked bacon, or 4 ounces cooked breakfast sausage, ham, or chicken
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons maple syrup
  • 1/2 avocado, sliced, optional
  • Hot sauce, optional
  • 1 tablespoon chopped fresh chives, optional

Instructions

  1. Cook or reheat the waffles until golden and crisp, then set them aside while preparing the filling.
  2. Cook or reheat the bacon, sausage, ham, or chicken as needed and keep warm.
  3. Melt the butter in a skillet over medium heat.
  4. Crack the eggs into the skillet and cook to your preferred doneness, or scramble them if desired. Season with salt and black pepper.
  5. Place the cheddar over the eggs during the final minute of cooking and allow it to begin melting.
  6. Place two waffles on serving plates and top each with an egg and melted cheese.
  7. Divide the cooked breakfast meat between the sandwiches. Add sliced avocado if desired.
  8. Drizzle each filling with a small amount of maple syrup or hot sauce.
  9. Top each sandwich with another waffle and gently press the layers together.
  10. Garnish with fresh chives if desired and serve immediately while the waffles are crisp and the cheese is melted.
