Ingredients
16 ounces cream cheese, softened
2 cups sharp cheddar cheese, freshly shredded
1 cup crushed pineapple, well drained
2 green onions, finely chopped
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon salt
1 1/2 cups finely chopped pecans
1 tablespoon chopped fresh parsley (optional)
Instructions
Drain the crushed pineapple thoroughly and press out as much moisture as possible.
In a large mixing bowl, combine the softened cream cheese and shredded cheddar cheese until smooth.
Stir in the drained pineapple, green onions, Worcestershire sauce, garlic powder, onion powder, black pepper, and salt until evenly combined.
Cover and refrigerate the mixture for about 1 hour until firm enough to shape.
Spread the chopped pecans onto a large plate.
Shape the chilled cheese mixture into a ball.
Roll the cheese ball in the chopped pecans until completely coated.
Transfer to a serving plate and refrigerate for another 30 minutes.
Garnish with fresh parsley if desired and serve with crackers, pretzels, toasted baguette slices, or fresh vegetables.
Notes
Drain the pineapple thoroughly to prevent the cheese ball from becoming too soft.
Add diced red bell pepper, dried cranberries, cayenne pepper, or crumbled bacon for flavorful variations.
Substitute walnuts or almonds for the pecans if preferred.
Store tightly wrapped or in an airtight container in the refrigerator for up to 5 days.
Freeze without the pecan coating for up to 1 month. Thaw overnight in the refrigerator, then coat with fresh pecans before serving.
