Veggie Grilled Cheese Sandwich is a crispy and melty sandwich packed with fresh vegetables and gooey cheese between golden toasted bread slices. This comforting vegetarian meal is quick to prepare and perfect for lunches, dinners, or snacks.

Ingredients

  • 4 slices bread
  • 1 cup shredded cheddar or mozzarella cheese
  • 1/4 cup bell peppers, thinly sliced
  • 1/4 cup spinach leaves
  • 1/4 cup tomato slices
  • 1/4 cup onions, thinly sliced
  • 2 tablespoons butter
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Mushrooms (optional addition)
  • Jalapeños (optional addition)
  • Avocado slices (optional addition)
  • Pesto sauce (optional addition)

Instructions

  1. Heat a skillet or griddle over medium heat.
  2. Butter one side of each bread slice.
  3. Place two slices of bread butter-side down onto the skillet.
  4. Sprinkle half of the cheese evenly over the bread.
  5. Layer the bell peppers, spinach, tomatoes, and onions over the cheese.
  6. Season lightly with black pepper and garlic powder.
  7. Top with the remaining cheese.
  8. Place the remaining bread slices on top with the buttered side facing outward.
  9. Cook for 3 to 4 minutes until the bottom is golden brown.
  10. Carefully flip the sandwiches and cook for another 3 to 4 minutes until the bread is crisp and the cheese is melted.
  11. Remove from the skillet and let cool slightly before slicing.
  12. Serve warm.
