Vegetarian Costco Chicken Bake recreates the cheesy, creamy, and savory flavors of the famous food court favorite using plant-based chicken-style strips and vegetarian ingredients. Wrapped in golden pizza dough and baked until crisp, these handheld bakes are perfect for lunch, dinner, or meal prep.

Ingredients

  • 2 cups plant-based chicken-style strips, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/3 cup Caesar-style dressing (vegetarian)
  • 1/2 cup cooked bacon-style vegetarian crumbles (optional)
  • 1 pound pizza dough, divided into 4 portions
  • 1 tablespoon all-purpose flour, for dusting
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons Parmesan cheese, grated
  • 1 tablespoon melted butter
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat the olive oil in a skillet over medium heat.
  3. Add the plant-based chicken strips and season with garlic powder, onion powder, black pepper, and Italian seasoning.
  4. Cook for 3–4 minutes until lightly browned, then remove from heat and allow to cool slightly.
  5. In a mixing bowl, combine the plant-based chicken, mozzarella cheese, Parmesan cheese, Caesar dressing, and vegetarian bacon crumbles if using.
  6. On a lightly floured surface, roll each portion of pizza dough into a rectangle approximately 6×10 inches.
  7. Divide the filling evenly among the dough rectangles and place it down the center of each piece.
  8. Fold the long sides over the filling and pinch the seams closed.
  9. Place seam-side down on the prepared baking sheet.
  10. Brush the tops with melted butter mixed with garlic powder.
  11. Sprinkle with mozzarella and Parmesan cheese.
  12. Bake for 20–25 minutes until golden brown and the cheese is melted.
  13. Allow the bakes to cool for 5 minutes before serving.
